      特级初榨橄榄油因为其较高的营养价值而深受市场欢迎。在巨大的经济利益驱动下, 橄榄油市场已成为欺诈现象最严重的领域之一。监管部门已经提出一系列鉴别指标和检测方法, 虽然起到一定效果, 但在面对新型掺假手段如软精炼时存在明显局限性。本综述聚焦于特级初榨橄榄油中掺入软精炼油的鉴别技术研究进展, 系统梳理了基于特征指标(如甘油二酯、脂肪酸烷基酯、挥发性物质、色素和酚类)的检测方法以及光谱和质谱法等现代分析技术的应用现状, 旨在为鉴别这一新型掺假形式提供理论支持和技术指导。同时, 本文展望了今后研究的重要方向, 运用高分辨质谱仪对特级初榨橄榄油和软精炼油进行非定向筛查, 再结合化学计量学的方法筛选出掺假标志物, 以期实现对软精炼油的鉴别。

      Extra virgin olive oil is highly popular in the market due to its superior nutritional value. Driven by huge economic interests, olive oil market has become one of the areas most severely affected by fraud. Regulatory authorities have established a series of identification indicators and testing methods. Although they have achieved certain effects, they have obvious limitations when dealing with new adulteration methods such as soft refining. This review focused on the research progress of identification techniques for adulterating extra virgin olive oil with soft refined oil. It systematically evaluated the detection methods based on characteristic markers (such as diacylglycerols, alkyl esters of fatty acids, volatile substances, pigments and phenols) as well as the application status of modern analytical techniques such as spectroscopy and mass spectrometry, aiming to provide theoretical support and technical guidance for identifying this new form of adulteration. At the same time, this article looked forward to important directions for future research, using high-resolution mass spectrometry for non targeted screening of extra virgin olive oil and soft refined oil, and combining chemometric methods to screen for adulteration markers, in order to achieve identification of soft refined oil.
