      目的 对8个紫苏品种叶片的挥发性有机化合物进行组分鉴定与差异分析。方法 基于气相色谱-离子迁移谱技术(gas chromatography-ion mobility spectrometry, GC-IMS)通过构建挥发性有机化合物指纹图谱, 结合偏最小二乘判别分析筛选特征差异化合物。结果 共鉴定出85种挥发性有机化合物, 涵盖12类化合物: 其中醛类24种, 醇类16种, 酯类14种, 烯烃类10种, 酮类8种, 酸类5种, 醚类2种, 吡嗪类2种, 呋喃、有机硫化物、芳香烃、酚类各1种。以变量投影重要性大于1, 显著性概率小于0.01为筛选标准, 共筛选出25种特征差异化合物。结论 GC-IMS技术可实现紫苏叶挥发性有机物的高效检测与差异分析, 所建立的化合物特征谱库及特征差异化合物筛选方法, 为紫苏品种的品质评价及风味物质开发提供了理论依据。
英文摘要:
      Objective To perform component identification and difference analysis of volatile organic compounds in 8 varieties of Perilla frutescens leaf. Methods Volatile organic compounds fingerprint spectra were created using gas chromatography-ion mobility spectrometry (GC-IMS). Differential compounds were screened via partial least squares discriminant analysis. Results A total of 85 VOCs were identified, covering 12 compound classes. Among them, there were 24 kinds of aldehydes, 16 kinds of alcohols, 14 kinds of esters, 10 kinds of alkenes, 8 kinds of ketones, 5 kinds of acids, 2 kinds of ethers, 2 kinds of pyrazines, 1 kinds of furan, 1 kinds of organosulfur compound, 1 kinds of aromatic hydrocarbon and 1 kinds of phenol. Using a variable projection importance greater than 1 and a significance probability less than 0.01 as the screening criteria, 25 kinds of characteristic differential compounds were identified. Conclusion GC-IMS technology enables efficient detection and difference analysis of VOCs in Perilla frutescens leaves. The established compound-specific spectra library and differential marker screening method provide a theoretical basis for perilla variety quality evaluation and flavor compound development.
