      禽蛋营养丰富, 是居民饮食结构中重要的组成部分。禽蛋品质的优劣影响其产品功能特性、消费者的购买意愿, 因此实现禽蛋品质精准检测十分重要。传统的禽蛋品质检测方法存在样品损坏、耗时等问题, 而无损检测技术可以在不破坏禽蛋完整性的前提下提供准确、快速的分析结果。无损检测技术中最常用的是光谱检测技术, 光谱分析作为一种成熟的检测方法, 是建立禽蛋蛋品质检测系统的有效工具。本文概述了禽蛋品质的传统检测方法的优缺点, 并系统阐述了光谱检测技术在禽蛋品质分析上的应用, 包括可见-近红外光谱、拉曼光谱、高光谱成像、脉冲红外热成像及介电光谱。同时, 本文提出了光谱检测技术在禽蛋品质分析中存在的问题, 如光谱信息没有选择性、现有分析模型难以系统化等。未来如何更好地结合光谱技术与科学分析技术, 实现无损、快速、环保的禽蛋品质无损检测, 是禽蛋品质无损检测研究中仍需解决的关键问题。本综述为禽蛋品质无损检测技术的快速发展提供理论参考, 为满足禽蛋行业的实际生产需求指明方向。

      Poultry eggs are rich in nutrients and are important part of the population’s dietary structure. The quality of poultry eggs affects the functional properties of its products and consumers’ willingness to buy, so it is very important to realize the accurate testing of poultry egg quality. Traditional methods for testing the quality of poultry eggs suffer from sample damage and time-consuming and time-consuming problems, whereas non-destructive testing techniques can provide accurate and rapid analytical results without destroying the integrity of the eggs. The most commonly used non-destructive testing technique is spectroscopy. Spectroscopic analysis, as a well-established testing technique, is an effective tool for establishing an egg quality testing system for poultry eggs. This review outlined the advantages and disadvantages of traditional testing methods for poultry egg quality and systematically described the application of spectroscopic testing techniques for the analysis of poultry egg quality, including visible-near infrared spectroscopy, Raman spectroscopy, hyperspectral imaging, pulsed infrared thermography and dielectric spectroscopy. Meanwhile, this paper presented the problems of spectroscopic detection technology in poultry egg quality analysis, such as the lack of selectivity of spectral information and the difficulty of systematizing the existing analytical models. In the future, how to better combine spectroscopic technology and scientific analysis technology to realize non-destructive, rapid and environmentally friendly non-destructive testing of poultry egg quality is a key issue that still needs to be solved in the research of non-destructive testing of poultry egg quality. This review provides a theoretical basis for the rapid development of nondestructive testing technology for egg quality and points out the direction to meet the actual production needs.
