近年来, 随着消费者对食品质量与安全问题的日益关注, 以及对地理标志性商品溯源意识的提高, 人们对原产地高质量食品的需求逐渐增加, 对此本文总结了近年来国内外食品地理来源掺假问题的现状和世界各地区对此问题的监管态度。然而由于利益驱动, 食品领域的欺诈行为屡屡发生, 各监管部门亟需有效、客观且快速的手段对地理标志性食品的真实性进行甄别, 为满足这一需求, 本文进一步阐述了化学计量学在食品产地溯源研究中的应用和具体实现方法, 综述了常用于食品产地溯源研究的理化分析方法, 包括以近红外光谱为代表的光谱法、同位素比例质谱、多元素分析、高效液相色谱-质谱法和气相色谱-质谱法等技术, 讨论了各种分析方法的优缺点及其面临的挑战, 以及不同数据模型的特点和适用范围, 展望了食品产地溯源技术在未来的研究重点和发展趋势, 拟为初涉该领域的研究者提供思路, 具有一定的参考价值。 |

In recent years, with the increasing attention of consumers to food quality and safety issues, as well as the improvement of awareness of the traceability of geographical landmark commodities, people’s demand for high-quality food of origin has gradually increased. This paper summarized the current situation of food adulteration of geographical origin at home and abroad in recent years and the regulatory attitude of various regions in the world. However, due to the frequent occurrence of fraud in the food field driven by interests, various regulatory departments urgently need effective, objective, and rapid means to identify the authenticity of geographically iconic foods. To meet this demand, this paper further elaborated on the application and specific implementation methods of chemometrics in the study of food origin traceability, reviewed the physicochemical analysis methods commonly used in food origin tracing, including spectroscopy represented by near-infrared spectroscopy, isotope proportional mass spectrometry, multielement analysis, high-performance liquid chromatography-mass spectrometry, and gas chromatography-mass spectrometry, discussed the advantages and disadvantages of various analysis methods and the challenges they face, as well as the characteristics and application scope of different data models, and looked forward to the research focus and development trend of food origin traceability technology in the future, which is intended to provide ideas for researchers who are new to this field and has certain reference value. |
