      丙烯酰胺是一类重要的化工原料, 同时也是食品热加工过程中典型的美拉德反应副产物。丙烯酰胺具有神经毒性、生殖毒性、遗传毒性、免疫毒性及潜在致癌性, 其中神经毒性有流行病学的调查研究, 因此, 丙烯酰胺神经毒性研究受到了广泛关注。已有的研究显示, 丙烯酰胺诱导的神经毒性是受多条信号通路调控的复杂过程。同时, 针对神经毒性干预作用的研究发现大量具有抗氧化性的多酚、黄酮类植物化合物对其具有一定的干预作用, 但是对于开发成丙烯酰胺神经毒性的膳食干预物还需要深入探究。为了更好地阐明丙烯酰胺毒性作用机制并明确其干预物, 本文综述了丙烯酰胺对人群的暴露情况, 重点总结了其诱导神经毒性的分子机制与常见天然活性产物干预其神经毒性的作用机制, 这将为筛选新的干预物提供理论参考。
英文摘要:
      Acrylamide is an important class of chemical raw materials and a typical by-product of the Maillard reaction in the thermal processing of food. Acrylamide has neurotoxicity, reproductive toxicity, genotoxicity, immunotoxicity and potential carcinogenicity, of which neurotoxicity has epidemiological investigations and studies, so the study of neurotoxicity of acrylamide has received extensive attention. Established studies have shown that acrylamide-induced neurotoxicity is a complex process that is regulated by multiple signaling pathways. Meanwhile, studies on neurotoxicity interventions have found that a large number of polyphenols and flavonoids with antioxidant properties have certain interventional effects, but in-depth investigation is needed for the development of dietary interventions into acrylamide neurotoxicity. In order to better elucidate the mechanism of acrylamide toxicity and clarify its interventions, this paper reviewed the exposure of acrylamide to the population, focused on summarizing the molecular mechanism of acrylamide-induced neurotoxicity and the interventions of common natural active products, which will provide theoretical references for the screening of new interventions.
