      为全面推广金枪鱼产品, 发展我国远洋渔业, 中华人民共和国农业农村部曾于2006年发布水产行业标准SC/T 3117—2006《生食金枪鱼》。随着生食金枪鱼加工业的不断发展, SC/T 3117—2006规定的部分指标已不符合产业实际。为有效规范生食金枪鱼产品的生产和保障产品质量, 2016年中华人民共和国农业农村部下达任务由中国水产科学研究院黄海水产研究所承担生食金枪鱼标准的修订工作。本文在介绍新标准《生食金枪鱼》基本框架的基础上, 阐述了中心温度、一氧化碳和挥发性盐基氮等主要技术指标的确立依据, 还对比了标准修订前后的主要变化内容。本文将为质量监管部门和生食金枪鱼生产企业正确理解和执行标准提供理论依据和技术参考。

      In order to comprehensively promote Thunnus obesos products and develop China’s pelagic fisheries, the Ministry of Agriculture and Rural Affairs of the People’s Republic of China issued the aquatic industry standard SC/T 3117—2006 Tuna for raw consumption in 2006. With the development of the Thunnus obesos for raw consumption processing industry, some technical indexes of SC/T 3117—2006 have not been able to meet the actual industrial requirements. In order to effectively regulate the production of raw Thunnus obesos products and ensure the product quality, in 2016, the Ministry of Agriculture and Rural Affairs of the People’s Republic of China assigned the task that the Yellow Sea Fisheries Research Institute of Chinese Academy of Fisheries undertake the revision of raw Thunnus obesos standards. On the basis of introducing basic framework of new standard, the paper demonstrated the revision basis for the important technical indicators, including central temperature, carbon monoxide, total volatile basic nitrogen. Moreover, the paper was also compared main changes and differences in the old and new standards. The paper will provide theoretical basis and technical reference for quality supervision department and raw Thunnus obesos production enterprises on correctly understanding and executing the standard.
