乳制品是人体健康必需营养的重要来源之一, 因此保证乳制品的质量和安全至关重要。作为一种新型的激光烧蚀原子发射光谱技术, 激光诱导击穿光谱(laser induced breakdown spectroscopy, LIBS)无需复杂的样品前处理, 即可实现样品的快速、高灵敏度、高精确度、多元素同时非接触检测, 目前已经在乳制品的定性和定量分析方面展现出了巨大的应用潜力。本文简要介绍了激光诱导击穿光谱的检测原理和提高检测灵敏度的方法, 综述了激光诱导击穿光谱在乳制品中矿物质元素、重金属元素、脂肪和蛋白质含量, 以及牛奶掺假物检测方面的最新研究进展。最后, 探讨了激光诱导击穿光谱在乳制品质量检测方面存在的问题并对其发展趋势进行了展望。本文旨在为乳制品质量安全快速检测的发展以及进一步探索LIBS技术在乳制品领域的应用研究提供参考。 |

Dairy products is one important source of essential nutrients for human health, and thus it is critical to ensure the quality and safety of dairy products. As one kind of novel laser-ablation atomic emission spectroscopy, laser induced breakdown spectroscopy (LIBS) requires no complicated sample pretreatment, and can be used for simultaneous and non-destructive measurement on multi-elements in samples with the advantages of rapid, high-sensitivity and high-precision, which has shown powerful potential for qualitative and quantitative analysis of dairy products. This paper briefly introduced the detection principle of LIBS and the methods to improve the detection sensitivity, and then reviewed the recent developments of LIBS for the detection of mineral elements, heavy metal elements, fats and proteins content in milk products, as well as the milk adulterants. Finally, the current problems and the future perspectives in the quality detection of dairy products using LIBS were discussed. This paper aims to provide the reference for the development of quality and safety detection of dairy products as well as for further exploring the applications of LIBS in dairy products. |
