      氢(H)、氧(O)稳定同位素在多种植源性食品产地鉴别、掺假鉴别、有机鉴别中等均得到了广泛的应用, H、O稳定同位素可较直观的反映谷物、果蔬、葡萄酒、茶叶产地纬度、海拔及相关气候信息, 在产地鉴别、种植模式鉴别中发挥重要作用。果汁、酒类可利用H、O稳定同位素实现外源水及酒精的掺假鉴别。在植源性食品真实性鉴别中, 利用H、O稳定同位素进行产地真实性、食品掺假、种植模式鉴别中均取得较好成果。H、O稳定同位素可被认为是食品真实性鉴别的有效手段之一。本文以国内外研究文献为基础, 综述H、O稳定同位素在植源性食品真实性鉴别中的研究进展, 阐明影响同位素分馏的环境气候因素和引起同位素分馏的物理、化学过程, 为植源性食品真实性鉴别建立统计评估的数据库提供参考。
英文摘要:
      Hydrogen (H) and oxygen (O) stable isotopes have been widely used in the identification, adulteration, and organic identification of multi-origin foods. The stable isotopes of H and O can more intuitively reflect the latitude, altitude and altitude of the origin of grains, fruits and vegetables, wine, and tea. Relevant climate information plays an important role in the identification of production areas and cultivation patterns. Juices and wines can use H and O stable isotopes to identify adulteration of exogenous water and alcohol. In the authenticity identification of plant-derived foods, the use of H and O stable isotopes for authenticity of origin, food adulteration, and identification of planting patterns have achieved good results. H and O stable isotopes can be considered as one of the effective methods for authenticity identification of food. Based on domestic and foreign research documents, this paper reviewed the research progress of H and O stable isotopes in the authenticity identification of plant-derived foods, and clarified the environmental and climatic factors that affected isotope fractionation and the physics that caused isotope fractionation. The chemical process provided a reference for the establishment of a statistical evaluation database for the authenticity identification of plant-derived foods.
