      目的 分析居民使用米、面制品营养标签的关联因素。方法 基于全国有代表性的1610个居民问卷调查样本, 利用Apriori算法关联规则分析他们使用营养成分表、营养声称、营养成分功能声称的行为。结果 正向的强关联因素是居民对配料表、食品生产许可证、生产日期和保质期、贮存条件、净含量等标签信息的关注, 而与个人及家庭特征、米面制品消费情况、营养与健康认知的关联较小。即在一般情况下, 我国居民购买米面制品首要关注含量、配料等标签信息, 然后在此基础上阅读营养标签做出消费决策。比较来看, 居民关注含量、配料等标签信息对使用营养成分表购买米面制品的促进作用最大, 其次是营养声称、营养成分功能声称。结论 加快实施米面制品(front of package, FOP)标签, 科普宣传提高居民营养标签意识, 引导商家规范使用标签, 将可能有助于改变营养标签的从属地位, 提高其关注度, 对食品标签的制定与完善有指导意义。
英文摘要:
      Objective To analyze the related factors of residents’ usage of nutrition labeling on rice andflour products. Methods Based on representative samples of 1610 residents in China, the association rule of Apriori algorithm was used to analyze their behaviors of using nutrition information panel, nutrition claims, nutrient function claims. Results Strong positive correlation factors were residents' attention to food production license, production date and shelf life, storage conditions, and net content, but the correlation was less with individual and family characteristics, rice and flour products consumption, nutrition and health cognition. That was, in general, Chinese residents tended to pay attention to the content, ingredients and other labeling information on products first,then read nutrition labeling to make decisions when they purchased rice and flour products. By comparison, residents who concerned about content, ingredients and other label information on products had the largest promoting effect on the nutrition information panel usage to purchase rice and flour products, followed bynutrition claims and nutrition function claims. Conclusions Accelerating the implementation of front of package (FOP) labeling for rice and flour products, promoting public awareness of the nutrition labeling and guiding producers to standardize the labeling usage may help change the subordinate status of nutrition labeling and increase their attention, and it is of guiding significance to the formulation and improvement of food labeling
