目前, 食源性疾病已成为全球非常关注的食品安全问题, 而食源性致病菌则是导致此类疾病发生的主要原因, 因此依靠有效的食源性致病菌检测技术对控制食源性疾病是极其重要的。本文主要阐述了有关食源性致病菌现有的检测技术, 主要应用的检测技术包括传统的培养检测、稍成熟的分子检测技术、正在发展的免疫学检测技术及生物传感器技术等。得出食源性致病菌检测技术想要更进一步的发展就必须向着灵敏度高、特异性强、操作简便并有效的方向努力, 需要基于现阶段应用技术的优化革新、各种检测技术的共同联用及将来更多新思路和新方法的出现的结论, 从而为食源性致病菌的检测提供技术支撑, 为检测机构及科研机构选择合适的检测技术提供参考。 |

At present, foodborne diseases have become a food safety issue of global concern, and foodborne pathogens are the main cause of such diseases. Therefore, relying on effective foodborne pathogen detection technology is extremely important to control foodborne diseases. This article mainly described the existing detection techniques for foodborne pathogens. The main detection technologies applied included traditional culture detection, slightly mature molecular detection technology, developing immunological detection technology and biosensor technology, etc. The conclusion is that for further development of foodborne pathogen detection technology, it is inevitable towards high sensitivity, strong specificity, easy operation and effective directions. This requires optimization and innovation based on the current application technology, the joint use of various detection technologies, and the emergence of more new ideas and methods in the future, which is helpful to provide technical support for the detection of foodborne pathogens, and reference for testing institutions and scientific research institutions to choose the appropriate detection technology. |
