      目的 获得通过单一食用盘锦河蟹途径的镉暴露风险程度。方法 在对盘锦河蟹进行连续4 年镉监测的基础上, 结合其他暴露参数, 分别利用风险熵(hazard quotient, HQ)和致癌风险指数(cancer risk index, CRI)对非致癌风险和致癌风险进行风险描述, 并根据风险评估软件@RISK6.0 模拟出消费者通过单一食用盘锦河蟹途径摄入镉的风险概率。结果 通过点评估和概率评估得出镉暴露的风险熵范围在0.001~0.05 之间, 致癌风险指数在1.5×10?6~1.0×10?4 之间, 进一步对每日允许最大食用量的评估结果显示, 每人每天食用大约398只河蟹可能引起镉的致癌风险, 远超消费者河蟹日摄入量。结论 通过单一食用盘锦河蟹途径的镉暴露非致癌风险和致癌风险较低, 但仍建议消费者尽量增加食物摄入的多样性, 以降低某种风险源的大量摄入累积。
英文摘要:
      Objective To obtain the cadmium exposure risk degree through the pathway of single consumption of Panjin Eriocheir sinensis. Methods On the basis of 4 years of cadmium monitoring of Panjin Eriocheir sinensis,combining with other exposure parameters, and using hazard quotient (HQ) and cancer risk index (CRI), the risk of non-carcinogenic risk and carcinogenic risk were described, respectively. And according to the risk assessment software @RISK6.0, the risk probability of cadmium uptake by consumers through a single consumption of Panjin Eriocheir sinensis was simulated. Results Through point assessment and probability assessment, the risk entropy range of cadmium exposure was between 0.001 and 0.05, and the carcinogenic risk index was between 1.5×10?6~1.0×10?4. A further assessment of the maximum daily allowable consumption showed that about 398 crabs per person per day could cause cadmium carcinogenic risk, far more than the daily intake of crab.Conclusion Cadmium exposure to non-carcinogenic risk and carcinogenic risk is lower through the pathway of single consumption of Panjin Eriocheir sinensis, but it is still suggested the consumers to increase the diversity of food intake as far as possible, to reduce the intake of certain risk source.
