      缩节胺是我国农业上普遍使用的一种植物生长调节剂, 对棉花、番茄等农产品的生长、发育具有很好的促进能力。然而植物生长调节剂和其他农药一样, 也存在某些毒性危害, 但缩节胺的毒性和残留在我国并没有得到足够的重视。随着毒理学的发展, 科研人员发现部分植物生长调节剂会有致癌作用。同时研究发现在特定的食品加工过程中, 由于高温等操作会导致缩节胺的自然形成。食品中形成的缩节胺已成为影响食品安全的重要潜在因素, 也吸引了人们对其危害的日益关注。本综述主要探讨了食品中缩节胺的形成机制, 阐述参与缩节胺生成所需的甲基供体, 总结其毒性研究, 以期为缩节胺的控制奠定理论基础。
英文摘要:
      Mepiquat is a kind of plant growth regulators commonly used in agriculture in China. It has good promotion ability for the growth and development of cotton, tomato and other agricultural products. However, the plant growth regulators are the same with other pesticides, which also have some toxicity, but the toxicity and residue of the mepiquat are not taken seriously attention in our country. With the development of toxicology, researchers found that some plant growth regulators had a carcinogenic effect. At the same time, it is found that mepiquat could be produced during certain food processing due to high temperature and other operation, and also has attracted increasing attention to its hazards. This review mainly discussed the formation mechanism of mepiquat in food, explained the methyl donor needed to participate in the production of mepiquat, and summarized its toxicity studies, so as to lay the theoretical foundation for the control of mepiquat.
