      目的 了解2013~2016年云浮市市售肉类禁用药物的污染状况, 为监管部门提供科学的理论数据。方法 按照《2013~2016 年广东食品安全风险监测工作手册》的监测要求, 在云浮市5个监测点, 根据采样场所类型随机采集样品; 按《国家食品污染和有害因素风险工作手册》进行9项β-受体激动剂、4项硝基呋喃类代谢物、共4项抗病毒药物的检验。结果 2013~2016年随机抽样监测265份样品, 肉类禁用药物监测总合格率为95.8%(254/265)。生、鲜鸡肉及冷冻鸡肉合格率为93.8%(122/130);畜肉及其肝脏合格率为97.8%(132/135); 检出项目中五氯酚钠和氯霉素的检出率最高为10%; 罗定市检出率最高, 12.5%(4/32), 新兴县检出率为0%。结论 云浮市市售肉类总体质量状况较好, 合格率为95.8%, 但2013~2016年监测样品中每年均有阳性结果检出, 需要加大监测和监管力度。

      Objective To investigate the pollution status of forbidden drugs in meat products sold in Yunfu city in 2013~2016, in order to provide scientific data for the regulatory authorities. Methods According to the requirements of Handbook of food safety risk monitoring in Guangdong in 2013~2016, 5 monitoring points were selected to randomly collect samples in Yunfu city. According to Manual of national food contamination and hazardous factors risk, the tests of 9 kinds of beta agonists, 4 kinds of metabolites and 4 kinds of antiviral drugs were carried out. Results A total of 265 samples were randomly sampled in 2013~2016, and the total qualified rate of forbidden drugs was 95.8% (254/265). The qualified rate of fresh chicken meat and frozen chicken was 93.8% (122 /130); the qualified rate of animal meat and its liver was 97.8% (132/135). The pentachlorophenol and chloramphenicol had the highest detection rate, which was 10% in detection items; the detection rate was 12.5% (4/32) in Luoding, while the detection rate was 0% in Xinxing. Conclusion The overall quality of meat sold in Yunfu city is in good conditions, with the qualification rate of 95.8%. However, the positive results were detected every year in 2013~2016, and the relative supervision should be strengthened.
