目的 通过对湖北省农村市场上食品的检测数据进行统计分析, 关注食品安全风险较高的食品种类和指标, 分析农村食品安全现状, 探讨农村食品安全管理对策。方法 依据随机抽样原则, 对2014~2015年湖北省农村市场抽取的12类、2500份食品样品采用食品安全国家标准进行检测和判定, 利用统计软件SPSS 13.0对检测结果进行数据统计和分析。结果 不同类别食品中水产品的合格率最高(98.62%), 酒类合格率最低(73.20%), 两者间的差异有统计学意义(P<0.05)。检测的品质指标、食品添加剂、重金属、其他污染物和微生物等指标中, 重金属的合格率最高(99.80%), 食品添加剂的合格率最低(93.75%), 两者间的差异有统计学意义(P<0.05)。结论 农村食品安全问题仍然存在, 不同食品种类、不同指标的检测合格率有所不同。酒类的质量状况较差, 食品中超范围使用食品添加剂的现象较为普遍。今后应建立农村市场食品安全的长效监管机制, 提高农村市场食品安全水平。 |

Objective To analyze the present situation of food safety in rural areas and explore the management countermeasures by focusing on food and indicators with high safety risks which were determined by analyzing the detected data of food in rural areas of Hubei province. Methods A total of 12 kinds of 2500 copies of food collected from rural market of Hubei province according to the principle of random sampling from 2014 to 2015 were determined by national food safety standard, and data statistics and analysis were conducted by SPSS 13.0. Results The qualified rate of water products was the highest (98.62%) in different categories of food, wines was the lowest (73.20%), and the difference between them existed statistical significance (P<0.05). The qualified rates of heavy metals and food additives were the highest (99.80%) and lowest (93.75%) respectively among the indicators of quality indicators, food additives, heavy metals, other pollutants, microorganisms, etc., and the difference between them showed statistical significance (P<0.05). Conclusion The food safety problem in rural areas is still prevalent and the qualified rate varies among the different categories and indicators of food. The quality of the wines and the abuse of food additives are serious. A long-term supervision mechanism of food safety should be established in rural market for improving the level of food safety. |
