      近年来,食品质量安全问题频繁发生,有机磷农药(organophosphorus pesticides,OPs)残留是食品安全问题的主要来源之一。OPs与其它种类杀虫剂相比,具有杀虫广谱、价格低廉、残效期较短以及抗药性不显著等优点,为广大农民所接受,广泛用于农作物的病虫害防治。但是,OPs的长期不合理使用,微量或痕量残留在蔬菜、水果和粮食上,对人、动植物以及环境造成了危害。因此,建立快速便捷,灵敏高效的OPs残留检测方法已刻不容缓。本文简要介绍了OPs的毒性、残留现状和管理措施,对仪器检测法如气相色谱法、气相色谱-质谱法、高效液相色谱法、液相色谱-串联质谱法等以及快速检测法如酶抑制法、免疫法和生物传感器法等在OPs残留检测中的应用进行了阐述,为进一步研究OPs的残留提供基础。
英文摘要:
      In recent years, the issues about the quality and safety of food have occurred frequently. Organophosphorus pesticides residue is one of the main sources of food safety problems. Compared with other kinds of pesticides, it has advantages of wide insecticidal spectrum, low price, shorter period of residual life and non-significant resistance to drugs, accepted by the broad masses of farmers, it is widely used for the prevention of diseases and pests in crops. While the long-term unreasonable use of organophosphorus pesticides, left trace residues in fruits, vegetables and cereal, which dose harm to people, plants, animals and environment. Therefore, it is urgent to establish a fast and convenient, sensitive and efficient detection methods for detecting OPs residue. The toxicity, current residue and management measures of OPs are briefly introduced. The instrument detection methods including gas chromatography, gas chromatography-mass spectrum, high performance liquid chromatography, liquid chromatography-tandem mass spectrum and rapid detection methods including enzyme inhibition method, immune method and biosensor method were summarized. This provides a basis for further study of organophosphorus pesticides residue.
