| 我国鳄鱼养殖量位居世界首位, 其富含蛋白质及生物活性肽且广泛存在于肉、皮、骨、头、血液及内脏组织中, 具有抗氧化、抗病原微生物、双向免疫调控和抗肿瘤等多种生物学活性和药理学活性, 在休闲食品、药品、保健品、特医特膳食品和化妆品领域具有广泛的应用前景。目前, 鳄鱼蛋白及其生物活性肽的研究仍然处于起步阶段, 存在体内外功效不一致、作用机制不明确及高端产品研发缺失等问题。本文综述了鳄鱼蛋白的组成、功能及其活性肽的功能与作用机制, 并对其发展方向进行了展望, 旨在为鳄鱼蛋白及生物活性肽的开发与应用提供理论依据和技术支撑。 |

| China ranks first in the world in crocodile farming. Crocodilian proteins and bioactive peptides are widely distributed in crocodile meat, skin, bone, head, blood and visceral tissues, and exhibit multiple biological and pharmacological activities, including antioxidant, antimicrobial, bidirectional immunomodulatory and antitumor effects. Crocodilian proteins and their derived bioactive peptides hold broad application potential in snack foods, pharmaceuticals, health products, foods for special medical purposes and cosmetics. However, current research on crocodile proteins and bioactive peptides remains in its infancy, with issues such as inconsistent in vitro and in vivo effects, unclear mechanisms of action, and a lack of advanced product development. This review summarized the composition and functions of crocodilian proteins, highlighted the functional activities and mechanisms of their bioactive peptides, and provided an outlook on future research directions, aiming to offer theoretical support and technical guidance for the development and application of crocodile proteins and bioactive peptides. |
